September 23, 1932 — June 8, 2020

Carol A. Smith, age 87, of St. Peter passed away on Monday, June 8, 2020. A private Memorial Mass of Christian Burial will take place at the Catholic Church of St. Peter. Burial will be in Calvary Cemetery, St. Peter. St. Peter Funeral Home is assisting the family with arrangements.

Carol was born to Benedict and Helen Green in New Ulm, on September 23, 1932. She graduated from St. Mary’s Grade School, and then New Ulm High School in 1950. She then went on to get her Dietician Degree from Clarke College, Dubuque, IA, and graduated in 1954. Carol married Michael Smith in 1955 in Dubuque, IA, and together they had 6 children.

Carol was a dietician for 30 years at the State Hospital, and was also an Adjunct Professor for an Internship program at the University of Minnesota in the Nutrition Department. She was on the team that researched and determined the effectiveness of cholesterol on the heart. She was a member of the Academy of Nutrition and Dietetics, as well as South Central and State Dietetic Associations. Carol was a member of the Catholic Church of St. Peter.  She was a former Regent of the Catholic Daughters. She volunteered as a Eucharistic Minister for the parish, as well as the John Ireland School. Carol also volunteered in the Thrift Store, and many other groups in the parish. She was a devoted mother, a caretaker to her dogs, birds, squirrels, rabbits and gophers.

Carol is survived by her children, Tim (MaryBeth), Patricia, Ann (Tom) Conlon, Susan and Michael (Mary); 11 grandchildren; 3 great-grandchildren; brother, Tom Green; brother-in-law, Red Wyczanski; sister-in-law, Elizabeth Green. Carol was preceded in death by her husband, Michael in 2000; daughter, Mary Catherine at birth; sister, Mary; brother, Bill; sister-in-law, Kay Green, as well as beloved dog companion, Ellie.
